Recipe - Chicken Tikka ( BBQ In Your Kitchen ) Without Coal Fire Grate

Hi. Everyone! Today we will teach you how to prepare Chicken Tikka(Chicken Bar-B-Q) at home without the charcoal-burner(Fireplace) or grill, just using your usual pots/saucepan (daigchi) & frying pan from your kitchen. Delight your kids with chicken tikka on a cloudy evening this summer vacation and they'll be very happy, but after this ask them to complete their homework.

Ingredients:

Chicken: 1-1/2 Kg (clean pieces and give cuts. see Step 1 image)
White Vinegar: 1/2 Cup
Lemons: 3 pieces
Yogurt: Half Cup
Food Color (Zarday ka rang ): 1/4 Tea Spoon
Ginger (ground ): Half Tablespoon
Garlic (ground ): Half Tablespoon
Cooking Oil: As needed to fry.
Tikka Masala Packet: 1 Pack

Serves: 4-6 people
 Step1: Marination
Method / Directions:
Mix vinegar and food color and apply on chicken. In another cup mix yogurt, garlic & ginger paste, lemon juice, and tikka masala, it should prepare a thick paste, apply this thick mixture with lemon cover onto the chicken pieces and marinate for a minimum of 1/2 hour.

Put the marinated chicken in a daigchi(pot) and give it light steam and when the water is nearly soaked take out the chicken and put it in a karahi(fry-pan) for deep frying, when it becomes golden-brown, put it back in the daigchi(pot) and put some more lemon juice and a burning coal-piece (koyla) in the middle ( step 3 & 4 images for instructions ) and close the pot and give let the smokey coal give it a smoked flavor for 5-7 minutes. Now your chicken tikka (desi chicken bbq in your kitchen) is ready to serve.

Step 2 - Steaming in your saucepan / pot (daigchi)

Step 3: After deep fry / browning put a bread piece on chicken and a burnning coal-piece (koyla) on it

Step 4: Put some ghee on the burning coal-piece to give the bar-b-q the smoked flavor.

Restaurant Review: Lasania Restaurant, Karachi.

Hi. Lasania is one of my favorite restaurants in Karachi. I haven't tried them in another city, but in Karachi they're great except for some items. The best they do is Chicken Boneless Handi, one of my favorite and we ate the same Handi at Lavish-Dine, but the difference was significant i.e. Lasania's handi is much more superior. The environment is good at the place, nice and cozy, but the toothpicks were not good ones :)

I do not prefer to go to Lasania on the weekend, because it's buffet on weekend and I do not feel that it's a perfect buffet restaurant, I went with my wife for lunch and it was buffet and the item I like most in lunch in Lasania is their Biryani ofcourse, but it was not quiet upto the mark with normal days.

Also a few days ago I took-away their Chicken Tikka and believe me it was :( not even normal, very dry and I told them to bring 1 chest piece and they gave me both leg-pieces.

CHICKEN TIKKA BIRYANI

CHICKEN TIKKA BIRYANI - By Estella Azeemi

rice 750 grams.boil in excess of water upto 75%
INGREDIENTS FOR CHICKEN MARINATION
1 1/2 kg chicken cut in 8 pieces
4 tbsp yogurt
4 tbsp lemon juice
1 tbsp garlic ginger paste
1/4 tsp jaefel jawitri powder
1/4 tsp green cardimum powder
1 tbsp red chilli powder
1 tsp garam masala powder
salt according to taste
yellow colour in a little quantity
2 tbsp oil
1 tsp meat tenderizer
leave chicken for 2 hours
then grill it for 30-40 min in pre heated oven at temp 180 centigrade.smoke it with a coal

METHOD
IN 3/4 cup of oil add 1 cup brown fry onion,1/4 cup yogurt, 1 tsp ginger garlic paste,3-4 chop tomatoes,1 tsp chilli powder,salt to taste and fry it
also add 1/4 tsp green cardimum powder ,1/2 tsp jaefel and jawiri powder,and add tikkas in it
1 tsp gram masala powder ,12-15 aaloo bukhara .1-4 bunch mint ,green corriander .10 green chillies.and after layering rice simmer it.

Food Review: Pizza HOT... A new brand of pizza in town...

Hi everyone ! having a nice summer vacation ? :)
Good news for Karachiites, there is a new pizza brand and I have experienced it and it's good. :) Actually one fine afternoon my door knocked and I bought a coupons card from their sales guy for Rs. 400/- and It had multiple offers and one Large Pizza totally FREE ! only 40 rupees delivery charges and some great offers valid through 2011.


I am attaching their scanned coupon card and the Pizza Menu and deals page, so that you can get an idea of the deals they're offering. They have two locations in Karachi right now, Aisha Manzil and Tariq Road (Near Mr. Burger), but I haven't visited their locations I just got my pizza delivered at home. I got a Chicken Tikka Pizza(my fav one) and it tasted good, you can match with Pizza Hut's where I have eaten several times.

They have some awsome bumper deals, like 3 Large Pizza, 1 Small Pizza, 2 Salad Bowls and 1.5 liter of cold-drink only for Rs. 1199/- if you have the coupon and ofcourse this kind of eating in Pizza Hut is going to be more than Rs. 3000/- so I think it's a great deal.

Party and Bumper deals... which I think are great in terms of pricing. But you need to have the coupon card for it.

Recipe: Badami Murgh Korma / Chicken Almond Korma - by Mrs. Iqtidar

Ingredients: 
  • Chicken Meat: 1 Kg 
  • Onions: 3 medium-sized 
  • Garlic + Ginger Paste: 2 Tablespoon 
  • Yogurt (Dahi): 1 Cup 
  • Crushed Almonds(Badam): 1/2 Cup 
  • Crushed Jayefal+Jawitri: 1/2 Teaspoon 
  • Chilli Powder: 1 Teaspoon 
  • Coriander(Dhanya) Powder: 2 Teaspoon 
  • Turmeric(Haldi) Powder: 1 pinch (chutki) 
  • Salt: As desired 
  • Ghee / Cooking Oil: 1-1/2 (dherh cup) 
  • National Korma Masala (Optional for fragrance & added taste) 
  • Tez-Patta: 2-3 leaves 
  • Sabit Garam Masala: Black Pepper 6-8, Laung/Cloves 4, Zeera 2 pinches, Dar Cheeni/Cinnamon 2 pieces, Bari Ilaichi (cardamom) 2 pieces Serves 4-6 people.

Method: First of all, cut the onion into small pieces and fry it in ghee. Take onion out when it turns golden-brown and in the same ghee/cooking oil pour the garam masala ingredients and tez-patta leaves into the oil and after 1-2 minutes put the chicken in it and fry it thoroughly for 5-7 mins. 

Now put garlic+ginger paste, red-Chilli powder, coriander powder, turmeric powder, and salt in it and cook it thoroughly for around 10 minutes for the meat to soften up. 

On the other hand mix jayefal+jawitri in the fried onions(tali hui pyaz) and crush it then mix it in yogurt(dahi) and pour it in the cooking-pot(daikchi) and cook thoroughly around 10 mins. 

In the end put the crushed almonds(Pisay huay badaam) in it and let it cook on low-flame(halki aanch) for around 10 mins (10 min k liye dam par laga den) untill the ghee/roghan comes on top of salan. 

Put some peeled almonds (sabit badaam) on the top of dish for good presentation. :) 

The super desi and tasty badaami qorma /korma is ready to serve & enjoy!
